What do they mean "sacrifice your very life essence to bring other happiness"? I think this is going to be important in the narrative, but nobody talked about it.

Well, it can mean that you help other character's with their issues, both in and out of battle, for example, helping Sans with his brother problem. We already seen this in Undertale.

But, do monster even have blood? well, Hitler had blood, he was shot somehow and he was bleeding out of one of his vital organs.

I'm surprised no one thought about this, but it's probably referencing monster souls. In OverTale, from what we know, at least most of the game, we'll be playing as Asriel, so we would likely be sacrificing a part of asriel's soul, how we sacrifice part of his soul is what's far-fetched, it could be that SAVING and LOADING is possibly using up determination in a more permanent matter by drawing from his soul itself, or it could be at some point in the game he'll need to permanently damage his soul to help someone... Or it could be the most likely answer, and that's that it's just referencing how Frisk gave their soul for Asriel's happiness.

I imagine even Hitler wasn't independent, so not all the blame should go onto him Afterall, there were highly influentive people for centuries that were able to turn events to their profit. Pardon my conspiracism

What do they mean "sacrifice your very life essence to bring other happiness"? I think this is going to be important in the narrative, but nobody talked about it. I think that this little quote is actually so important, that it can be called a whole one of the most important ingredients of the Overtale's universe mechanics. Let's all carefull look at what we've got already, and try to draw connections with Underatle. So. In Undertale every monster that you met, had a "problem" to deal with. From the very first creature you meet to the very last boss you fight. it is obvious that every monster in the Underground had something to overcome, to then be able to be your friend. And an even better formulation would be " to stop being your enemy" (and, funnily enough as I just noticed) appereantly, all your enemies were trying to stop you. Literally. They all were blocking your path. I don't remember correctly every boss you fight, but Toriel and Papyrus' discription in the start of the fight is "Toriel/Papyrus is blocking the way", is it not? And the very least, every main character in the game had speific feature that "didn't let things to go the good way". Toriel was trying to help you by forcing you to stay, while it wasn't the actual right decision, as we know it in the end. Papyrus wanted fame, Metaton - attention. Undyne - to kill the final human. Asgore - to give hope to his people... and so on. And that is very interesting, how you beat their, if you can call it so, "sins" (aka that one bad trait that is the worst in them) with some specific human trait - bravery/ justice/ kindness, and so on. So, we can see that in the Underground every single one had a problem. Even you, the player, had a problem. And Sans then, very well announced it: " ...you'll just keep going. not out of any desire for good or evil... but just because you think you can... and just because you "can", you "have to"... "
Ironic, is it not? You've saved the whole race, but you can't achieve your own goal that you have discovered in the end... to actually levave this place satisfied. it doesn't even really matter, was it because of that one last soul that was left there, or because you are the "player" and you want to play genocide as well, to get "everything you can" from the game. And now, here we see Overtale. Where monsters, again, seem to be having a need in our help. They are again in trouble, and we will have to individually help them, just like in Undertale. And what about "Sacrafice your very life essence to bring other happiness" - I am sure it has to do with the nature of Monsters. They are made out of love and magic, after all! And we as well all know, that monsters are more "spiritual" creatures if you look at their nature and how the act and live, and the humans are more "physical". So, in these terms, I imagine, that "Love", "Happiness", "Care" and all those other things, that are just "emtions" for Humans, are far more real to Monsters. So, i say this: In Overtale you will have to share pieces of yourself, of your own life, ( which consist of love) to share love to others. And oh boy, are we not going to tear up at the end? Because it seems like it is going to be "A sacrafice of one for everyone" ending. ... Just like how it has been 15 years ago...

how we sacrifice part of his soul is what's far-fetched, it could be that SAVING and LOADING is possibly using up determination in a more permanent matter by drawing from his soul itself Perhaps there'll be limited saving/loading in the game? That seems like it would serve to annoy some people, though.

That seems like it would serve to annoy some people, though. Limiting the amount of saves is a risky thing to do. It touches a too important feature that is what the players need to play, and one can easily do everything as it was expected by devs. For example, one can use half of their saves everywhere, and then realise he wished to not do that, when it comes to difficult fights. Gaming history has learned the lesson of humans' unpredictable nature, so I think they won' add that to the game (or at least, they will make sure it is impossible to mistake what the game advice them to do withbit)
